Super-Quick Lamb Bolognese
This super-quick dinner can easily be modified to fit what you have in your pantry. The ground lamb and sweet italian lamb sausage do the bulk of the work creating the flavor of this sauce. This recipe is how we make it in our home. We love how this sauce gets even better the next day. If you're really in a hurry, just sauté the onion, the two meats and your favorite tomato sauce and serve over pasta. If you want to try it the way we enjoy it in our home, keep reading!

Heat the olive oil in a sauté pan and add the onions. Sauté them until they are starting to turn translucent. Then add the mushrooms and cook until their texture softens. At this point you can add the ground lamb and sausage. Once they have cooked and the fat is rendered, remove the excess liquid with a spoon. Then add the tomato cans and frozen tomato puree. Let cook for about 5 minutes and then when the sauce is simmering nicely, add the red wine. Simmer your sauce for about 20 minutes until the whole tomatoes have softened. Right before serving add the milk and parmesan cheese and stir. Serve over your favorite pasta. We like a hearty Rigatoni in our house!
