As soon as our birds are feathered out they are on pasture 24/7. Fresh air, foraging for bugs and eating fresh greens and enjoying organic grains grown here in the Hudson River Valley, make for some delicious chicken!
This is a flexible weekly Chicken CSA. You will receive 1 of our pasture-raised chickens for 12 of the 16 weeks of Ridgefield's Farmer's Market (Saturdays 10-1pm June 21 though October 4). (You pick which weeks you want to skip and let us know in advance!). Want innards and feet? Place a note in your initial order and they will be included throughout the CSA.
PLEASE NOTE: This is a CSA (community supported agriculture) meaning you are paying for your meat in advance. This is one way you are able to support our farming efforts so that we are in this together. This money helps offset the costs of providing food and care to our animals during their growing season. Our birds average 4.2lb each.

With a CSA you also don't miss out on chicken, probably the most popular meat we sell. We will have a few extra birds to bring to some markets but certainly not enough to meet demand.
PRICE: Your CSA price is based on $8.50/lb. Our regular pricing for birds is $9/lb for whole birds and $11/lb for butterflied chicken. Your CSA saves you over $25 off of the regular farm-stand price!

"What is the difference between your birds and what I get in the supermarket?"
The simple answer is: more flavor, more nutrition and better for the environment!
You will notice a few things different about our birds. First, the appearance. They are different breeds, developed to grow slower than your typical supermarket chicken. With that slower growth comes more activity foraging the pasture and therefore more flavor. You might notice more equal distribution between white and dark meat as well (the supermarket chickens were developed to have primarily white meat). And finally, if you make stock from your carcass (and you should!), you will find it has a much richer color and thicker (more gelatinous) texture than stock made from your average supermarket chicken. Why? Because these birds are so much more nutrient dense, due to all that they have consumed over the course of their life. They truly are what they eat! Freeze all of this stock and it will sustain you over the cold winter months when cold and flu season runs its course around you. And our birds are raised on pasture with a strong focus on soil health. As a result of how we manage the birds, we leave our environment better than when we find it!
