This loin roast has just a perfect rind of fat to keep your roast moist and flavorful. We love coating it in a mix of seasonings (often dried green herbs and caraway seeds). This would easily serve 6-8 people for a delicious dinner and if there are any leftovers they are equally delicious sliced thinly to enjoy cold the next day.
