Whole Lamb Share
Our pastured lamb is filled with flavor reflecting the diversity of plants that our sheep graze and the vitality of our soils here in the Hudson Valley. Our lamb is Certified Regenified meaning it traces back to verified practices and outcomes focused on improving soil and ecosystem health.
We are inspected annually, undergo rigorous soil testing and must continue to improve in order to maintain our certification (because we can always do better!). Engaging in education is also an element of this certification and something we value deeply here.
Understanding the vitality of our soil and how to support this dynamic ecosystem with our farming practices is at the heart of Henny Penny’s mission “to protect the environment by working in harmony with Nature’s rhythms, to raised nurtured happy animals, to teach your children about food and to feed your families the healthiest, most nutrient-dense food possible."
Your whole lamb will come frozen, in vacuum-sealed packages of individual cuts.
What is included:
- 1 x boneless shoulder
- 1 shoulder, cubed
- Rib chops (8 ribs) (4 per package, 4 packages) (if you prefer one rack whole and one chopped please write a note with your order)
- Loin chops (4 per package, 4 packages)
- 1 x Leg bone-in
- 1 x butterflied leg
- 2 packs of 2 shanks (4 shanks total)
- about 6lb of ground lamb
- Bag of bones
- Organs (if received from butcher; typically heart, liver, kidneys)
- we do not include the head unless you request it.
Your whole lamb share gives you a savings of over $100 on average when compared to buying the cuts individually.
A $450 deposit will be charged at the time of reserving your lamb share. The remaining amount due, calculated based on actual weight, will be charged at the time of pickup.
We will reach out regarding delivery estimate via email after you have placed your order. Depending on the time of year, lamb shares can be a wait of up to 6 months but typically are less than that.
