Dulce de Leche

This is a really fun project to make and the final product can be used in a multitude of ways! Spread dulce de leche on toast, drizzle over ice cream, use it part of any dessert creation or even dip apple slices in it!

Ingredients
- (1 quart) Whole Milk
- (1 1/2 cups) sugar
- (1/4 tsp baking soda) baking soda
- (1/2 tsp) vanilla extract
Directions
This is a great recipe for when you are in the kitchen on a Sunday (or any quarantine day!). Put the quart of milk, vanilla extract and sugar in a heavy-bottomed saucepan over medium heat. Stir occasionally and once the sugar is dissolved add the baking soda and then turn down to low heat. Then cook for about 3-4 hours, stirring occasionally until the mixture is reduced down to about 1 1/4 cups. Don't try and incorporate the foam or clumps of milk proteins on the top. Once the mixture is reduced and the color of a rich caramel, remove from heat and filter through a metal sieve into a glass jar. Leave to cool and then store, covered, in the fridge.
