Grandma's Beer Baked Beans

My Grandpa always loved my Grandma's Beer Baked Beans. After she died I received her recipe book as we spent hours baking together while I was a child. I never managed to find this recipe in the book while my grandfather was still alive but finally found, this tiny sheet of paper tucked among the pages and pages of recipes a couple years ago and It was incredible. Instead of using 'salt pork' I recommend using either our ham steaks (cubed) or a small smoked hock. I also did the accelerated version for soaking beans. You will be amazed at the alchemy that happens over the hours of cooking these beans. Truly a feast unto themselves. I make Herbed Texas Toast to serve alongside the beans. A perfect dinner!

Ingredients
- (1lb) Soldier Beans
- (6 cups) water
- (2tsp) salt
- (small hunk) salt pork or ham
- (1) onion, chopped
- (1) green pepper, chopped
- (1 clove) garlic, minced
- (1/2 cup) molasses
- (1 tsp) dry mustard
- (12 oz can) beer
